Description
Cavatelli are small pasta shells from egglesssemolina,with a gap through the middle which is great for capturing the sauce,have an elongated shape with a hollow cavity made by pressing ones fingers into small pieces of pasta.Made from three simple ingredients, durum wheat semolina flour, lukewarm water, and a pinch of salt, cavatelli are considered to be one of the oldest pasta types.

USES
Suggested Usage
Commonly cooked with garlic andbroccoliorbroccoli rabe. A variant adds ricottacheese to the dough mix. Or perfect toserve cavatelli is with dried sweet peppers known aspepperonicruschi, breadcrumbs andchilipepper.
